Description

These Crumbl pumpkin roll cookies are made with a thick pumpkin cookie, topped with cinnamon brown sugar, and decorated with cream cheese frosting.

For Pumpkin Cookie
  • 1.2 cup unsalted butter - softened
  • 1/2 cup granulated Sugar
  • 1/3 cup brown sugar
  • 1 large egg yolk
  • 1/4 cup Pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 2/3 cup all purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 3/4 teaspoon pumpkin pie spice
  • 1/4 teaspoon cinnamon
  • Cinnamon sugar mixture
  • 3 tablespoons unsalted butter
  • 2 tablespoons granulated sugar
  • 2 tablespoons brown sugar
  • 2 teaspoon cinnamon
  • 3 tablespoons all purpose flour
  • caramel cream cheese frosting
  • 2 oz cream cheese - softened
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1/2 cup powdered sugar
Instructions
  1. Preheat the oven to 350F, then line a baking sheet with parchment paper

  2. Make the Cinnamon Sugar Mixture
    • Mix the softened butter, brown sugar, granulated sugar, flour, and cinnamon in a small bowl then divide into 8 little balls. Set This aside.
  3. For the Cookie Base
  4. Cream the butter, brown sugar, and granulated sugar together until smooth. Then, add the egg yolk, pumpkin puree, and vanilla extract and mix again to combine.
  5. Add in the flour, salt, baking powder, pumpkin pie spice, and cinnamon, and mix just until the flour mixture disappears.
  6. Scoop out eight equally sized cookie dough balls using a large cookie scooper. Place them on a baking sheet, 

  7. Top with the cinnamon-sugar mixturegently flatten to about 1 inch thick and bake for 15 minutes. 

  8. Let the cookies cool down on the baking sheet for 20 then transfer to a cooling rack. Let the cookies cool down to room temperature before frosting.

  9. Make the Cream Cheese Frosting
  10. Cream the butter, cream cheese, powdered sugar, and vanilla together until smooth and creamy.

  11. Fill a piping bag or a Ziploc bag with the cream cheese frosting. Pipe the frosting all around to create a beautiful swirl design, and enjoy.
