Dicing of the Apples: This was the most challenging part for me; I used a dicer TWICE! I peeled and cored the apples. I used the dice once, then took the apple bits and put them into the dicer again. But I wasn't done; I used a pastry cutter to get the apples as small as possible. You could use a cheese grader with large holes; I didn't have one. You will have to drain the apples. I patted the apple dry with a paper towel.

These Apple Nut Roll Bites are perfect for a cozy fall afternoon, a holiday gathering, or even as a quick breakfast treat. Enjoy their sweet and nutty goodness with a warm cup of coffee or tea!
Preheat the oven to 350F and line a baking sheet with parchment paper. Then, remove the pastry dough from the freezer or refrigerator so it can start to warm up. Mix the granulated and brown sugar with the cinnamon in a shallow bowl and set aside.
Combine the diced apples, chopped nuts, ground cinnamon, brown sugar, and vanilla extract in a bowl. Mix until the apples and nuts are well-coated.
Slightly Roll out the puff pastry dough on a lightly floured surface. You want to stretch the dough just a little bit.
Place half of the apple-nut mixture on the pastry sheet, spreading it to cover most of it. Leave space around the edges. Don't overstuff; a thin layer works best.
Starting at the longest end, begin to slowly roll the dough tightly. Padding it down as you roll. Be sure to end with the dough end on the bottom. Seal up each side ends. Place the roll in the center of a baking sheet.
Brush on the egg yolk mixture. Cut the roll into 10 -12 pieces. Move the pieces around on the baking sheet so there is space between them.
Bake at 350 degrees for 12- 15, maybe longer if needed.
While they are still warm, roll them in the sugar and cinnamon mixture, Let cool and enjoy?
