Instructions

Make the Filling

  1. With an electric mixer, beat butter until light and fluffy

  2. Add powdered sugar and vanilla extract beat again for 1 minute
  3. Add the sweetened condensed milk and the almond and coconut extract
  4. Fold in the shredded coconut and mix by hand until fully distributed within butter mixture
  5. Fold in 1/4 cup of the chopped almond and mix well, then decide if you want more nuts fold them in.

Make the Coconut Balls

  1. Using a small scoop ( #60 or #70 ), make level mounds that weigh 12 - 13 grams each. Roll in the palm of your hand to make a round ball. Place onto a baking sheet with wax paper and place into the refrigerator for 1 hour or longer.

Dip in Chocolate

  1. Melt one tablespoon of Crisco in a double boiler where the top pot does not touch the water. Add 8oz chopped chocolate and stir until almost melted; remove from heat and continue to stir. Once completely melted, pierce the chilled coconut ball with a fork. Dip into the melted chocolate and place on the baking sheet with parchment paper, allowing it to form a flat bottom. You can also completely cover the coconut ball in chocolate if you choose to.

Garnish

  1. Drizzle melted chocolate over the top of the coconut ball and sprinkle with toasted coconut chopped almonds or both.
