How I Make Apple Nut Roll Bites

Roll Your Way to Perfection

With just a few simple steps, you’ll have a batch of delightful Apple Nut Roll Bites ready to enjoy. Follow this easy guide to create a treat that’s as beautiful as delicious.

Dicing of the Apples: This was the most challenging part for me; I used a dicer TWICE! I peeled and cored the apples. I used the dice once, then took the apple bits and put them into the dicer again. But I wasn’t done; I used a pastry cutter to get the apples as small as possible. You could use a cheese grader with large holes; I didn’t have one. You will have to drain the apples. I patted the apple dry with a paper towel.

  1. Prepare the Filling
    • Combine the diced apples, chopped nuts, ground cinnamon, and brown sugar in a bowl. Mix until the apples and nuts are well-coated.
  1. Roll and Fill the Pastry
    • Roll out one of the puff pastry dough sheets on a lightly floured surface.
This is the short-end
  1. Place half of the apple-nut mixture onto one pastry sheet. Keep the rest of the mix for the second pastry sheet. Be careful not to overfill.
  1. Beginning with the long end, roll the pastry sheet with the filling and lightly pat it down with each roll.
  2. Place on a baking sheet. Then cut into 11 or 12 pieces. I added some of the topping before I baked them.
  1. Bake
    • Preheat your oven to 375°F (190°C).
    • Place the prepared rolls on a baking sheet lined with parchment paper.
    • Bake for 20-25 minutes or until the pastry is golden and puffed.
  2. Add the Topping
    • Combine the brown and granulated sugar with the cinnamon in a shallow bowl.
    • While the rolls are still warm, sprinkle them generously with granulated sugar and ground cinnamon. Let them cool slightly before serving.

My Pro Tips for Perfect Apple Nut Roll Bites

  • Keep the Puff Pastry Cold: Cold puff pastry puffs up better in the oven. If it gets too warm while you’re assembling the bites, pop it back in the fridge for a few minutes.
  • Prevent Soggy Pastry: Drain any excess liquid from the apple mixture before adding it to the pastry to avoid soggy bottoms.
  • Use a Pastry Brush: Brush the tops of the rolls with a little beaten egg before baking for an extra golden and glossy finish.
  • Customize Your Fillings: Add raisins, dried cranberries, or a dash of nutmeg for extra flavor.
  • Serve Warm: These bites are best enjoyed warm out of the oven, but they’re still delicious at room temperature.

Storage Information

  • Refrigeration: Store leftover Apple Nut Roll Bites in an airtight container in the refrigerator for up to 3 days. Reheat them in the oven or air fryer for a few minutes to return their flaky texture.
  • Freezing: These bites freeze beautifully! Please place them in a freezer-safe container or bag and freeze them for up to a month. Bake them directly from frozen at 350°F (175°C) to reheat until heated.

Frequently Asked Questions

Expand All:
Can I use homemade puff pastry dough?

Absolutely! Store-bought puff pastry is a time-saver, but homemade dough works perfectly for this recipe.

What type of apples work best?

Firm and slightly tart apples like Granny Smith or Honeycrisp work best for baking.

Can I use other nuts?

Yes! You can substitute pecans or walnuts with almonds, hazelnuts, or pistachios or even omit them altogether.

How do I prevent the filling from leaking out?

Seal the pastry edges tightly. Crimping the edges with a fork can also help secure the filling.
