  1. Preheat oven to 350 degrees.- Line baking sheets with parchment paper 

  1. Whisk together flour, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside 

  1. Blend butter, brown sugar, granulated sugar, and eggs in a large bowl or electric mixer until creamy and smooth. Add vanilla and beat until smooth.

  1. Gradually add the dry mixture to the butter/sugar mixture and blend well. Mix in oats. 

  1. Peel and finely dice the apple. You should get about 1 cup of apple pieces.
  1. Fold the apple pieces into the dough.
  1. Scoop dough into 1-inch balls and place evenly on a lined cookie sheet.

  1. Bake for 12 minutes or until lightly browning on the edges of the cookies. Let cool for 5 minutes on the baking sheet and then transfer to a cooling rack.

  • The cookies will look a little unbaked on the top when they come out, but they will continue to cook on the baking sheet. 
  • I like to taste more of the spices in the cookie, so I increased the ground cinnamon to 1 1/2 to 2 teaspoons, one teaspoon of nutmeg, and one teaspoon of ginger.
  • This oatmeal cookie recipe is an excellent base for other mix-ins, such as butterscotch chips, chocolate chips, or raisins. If you use a mix-in other than apples, bake for 10 minutes instead of 12.
  • These cookies freeze really well! Just place the baked and cooled cookies in a freezer bag or airtight container.
